This is a 1 year full time course.

About The Course

This course will give you an opportunity to learn about food preparation and to develop your employability skills. You will spend time doing practical activities in the kitchens to develop your basic kitchen skills. You will be preparing food in the skills kitchens which have facilities which are often better than industry standard. It will give you an opportunity to practice your food preparation skills without the pressure of service demands as you will not be preparing food directly for the college restaurant.

There is a considerable classroom element of the course where you will enhance your employability skills. You will learn about how to present yourself to the public and to customers and how to maintain a professional appearance. You will work on interview skills and how to work well in a team. This will help prepare you for a career in the catering industry and to progress onto higher level qualifications within the area.

The catering department has exceptional facilities with several very well equipped kitchens, a bakery and an 80 seat, licensed public restaurant.

You are required to purchase some specialist equipment before the start of the course.  This includes kitchen uniforms and a basic set of professional kitchen knives.  The approximate cost of which is £100.The College will give you more information on this before you start your course. Those in financial hardship can apply for help from the college's Learner Support Fund. You are expected to study functional skills in English and maths where necessary.

Will this course suit me?

An ideal student for this course is one who is motivated with a desire to learn and has an interest in the catering industry as well as cookery. You must be flexible and self-motivated and happy to work in a disciplined environment. You will need to be well organised.

How will it be delivered?

Your practical work will be assessed in the kitchens through observation of practical tasks and written questions. The assignments are spread out evenly over the academic year.

Entry requirements

There are no formal entry requirements needed to join, but those in education will be expected to complete their current learning programme. You may be asked to complete an assessment of your maths and English skills at interview.

Where can it lead?

It can lead on to the Catering & Hospitality level 1 Diploma.
Career opportunities include working in the kitchen or front of house as a server, barista or bar staff in a variety of pubs, clubs, restaurants and hotels.
